Easy Campfire Éclair with 3 Ingredients

Our camping family are always looking for something new to try to cook over the fire. We have always made the Traditional Pudgy Pies but the past couple years we wanted to try more. We’ve made Campfire Ice Cream Cones, Adult S’more Shots, Strawberry Shortcake Pudgy Pies and then we found Campfire Eclairs…….Shut The Front Door!!! What?!? We had to try it, and we did with great success. We also were able to find out new tips to guarantee success every time we made them. The campground owner is always excited when we make these because we always have extra for him. He let us know he eats one the same night we give it to him, and will put the second one in the refrigerator to eat the next day. This year he let us know they went great with his coffee in the morning.

We will share our Pro Tips we have learned along the way so you can wow your campground neighbors. These are easy to make with only 3 ingredients and only 1 needs to be in the refrigerator or cooler, so prepping is simple. You can make this in your back yard, tent camping, with your camper or Rv or even Glamping.

Tools Needed:

Aluminum Foil

Wooden Dowel 1 inch or 3/4 inch (we have used both) 1 inch dowel is easier to fill but has a bigger hole at the opening

Ingredients:

Cooking Spray

Crescent Rolls (refrigerated type) 8 to a tube

Vanilla Pudding (we use the individual serving containers)

Chocolate Frosting (you can use whatever you like, I use Rich & Creamy)

Directions:

  1. Cover an end with aluminum foil and lightly spray with cooking spray. This way you don’t have to worry about trying to keep a wooden dowel clean when storing it.
  2. Use 1 crescent roll and place it over the dowel. Pinch edges together to seal it. Slightly thin out but not too much that you can see the aluminum foil through the dough. ProTip: have the very tip of the crescent roll, and another corner meet. Start your pinching together there, it will match up better starting here.

3. Place over fire. It doesn’t matter if it’s over flame or coals just keep watching it. You will notice it start to “puff up” and look more like a crescent roll. We cook it until it’s golden brown.

ProTip: We only cook 3 on the same piece of aluminum foil and the same side of the dowel. It gets hot and the crescent roll wants to melt and fall off of the dowel before it’s cooked. Flip the dowel, and use the other cool end that you were holding. Bonus for when it’s cold out and you get a hand warmer while you cook.

4. Remove the cooked crescent roll off of the aluminum foil.

ProTip: Take the foil off of the dowel and let is cool for approximately 30-60 seconds. The crescent roll will slide right off and onto your plate.

5. Fill the crescent roll with Vanilla Pudding. I have done this with a spoon (using the 1 inch dowel) or a butter knife (3/4 dowel). We use approximately 1/2 or less of a individual pudding cup per serving. We tried a using a bag with the pudding inside of it, and cutting off an end but we felt like there was a lot of wasted pudding.

6. Apply your frosting on the top of your crescent roll being careful not to squish it as it is light, fluffy, hollow and filled with pudding just waiting to squirt out.

7. Your crescent roll has now become an Éclair. Enjoy!

This is an easy recipe for desert at the campsite. Preparation is easy, clean up is easy and there are only 3 ingredients. Everyone is always shocked that is was made with crescent rolls then even more shocked that they were made over the fire. Let us know if you added your own touch and what was it?
